- 1 cup active sourdough starter (100% hydration)
- 1 cup all-purpose flour
- 1 tablespoon sugar
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- ¼ teaspoon salt
- 1 large egg
- ¾ cup milk (whole or alternative)
- 3 tablespoons melted butter (plus more for cooking)
- Zest of 1 lemon
- 1 tablespoon fresh lemon juice
- 1 cup fresh blueberries (plus more for topping)
- Maple syrup (for serving)
- Extra blueberries and lemon slices (optional for serving)
Instructions
- In a large bowl, mix sourdough starter, flour, sugar, baking powder, baking soda, and salt.
- In a separate bowl, whisk together egg, milk, melted butter, lemon zest, and lemon juice.
- Pour wet mixture into dry and gently fold until just combined (some lumps are okay).
- Fold in the blueberries, reserving a few for topping.
- Heat a skillet over medium heat and grease with butter.
- Scoop ¼ cup batter per pancake onto the skillet. Cook 2–3 minutes per side until golden and cooked through.
- Keep warm in a 200°F oven if desired while cooking the rest.
- Serve stacked with maple syrup, fresh blueberries, and lemon slices.
Notes
Use an active, bubbly starter for best results. Don’t overmix the batter. Frozen blueberries work if fresh aren’t available—just toss them in a bit of flour before adding. For dairy-free, use almond milk and coconut oil. For gluten-free, use a 1:1 GF flour blend.
