These Keto Italian Garlic Breadsticks are soft, cheesy, low-carb, and full of garlic-herb flavor. Made with fathead dough and brushed with melted butter, they’re the perfect gluten-free side dish to pair with soups, casseroles, or Italian-inspired meals.
Ingredients

- 3 cups shredded mozzarella cheese
- ¼ cup cream cheese
- 2 eggs (use 4 if using coconut flour)
- 1 teaspoon baking powder
- ¾ cup almond flour or ⅔ cup coconut flour
- 1 teaspoon garlic powder
- Italian seasoning, to taste
- Himalayan salt, to taste
- Melted butter, for brushing (optional)
Instructions
- In a mixing bowl, whisk together almond flour (or coconut flour), baking powder, and garlic powder.
- Melt mozzarella and cream cheese together in a double boiler or microwave until smooth.
- Let the cheese cool slightly, then add eggs and dry ingredients. Mix until a uniform dough forms.
- Chill the dough in the refrigerator for 30 minutes.
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Divide dough into 8 equal portions, roll into 6-7 inch logs, and flatten slightly.
- Brush with melted butter and sprinkle with Italian seasoning and Himalayan salt.
- Bake for 18–20 minutes or until golden brown. Serve warm.
Notes
Store leftovers in an airtight container in the fridge for up to 5 days. Reheat at 300°F for 5 minutes. To freeze, wrap each stick in parchment and freeze in a bag. Bake from frozen to refresh. Perfect with soups or dips.
