Description

Ingredients

  • 16 ounces Italian sausage (mild or spicy)
  • 1/2 medium onion, chopped
  • 34 cloves garlic, minced
  • 1/2 teaspoon crushed red pepper flakes (optional)
  • 1 cup uncooked orzo pasta
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1/2 cup freshly grated parmesan
  • 2 cups fresh baby spinach, packed
  • Salt and pepper to taste

Instructions

  1. In a large pot, crumble and cook the Italian sausage over medium-high heat until browned.
  2. Add chopped onion and cook until softened.
  3. Add garlic and crushed red pepper flakes, cooking for 30 seconds.
  4. Add orzo pasta and stir to coat with sausage and garlic.
  5. Pour in chicken broth and heavy cream, bring to a simmer. Cook uncovered for 10 minutes, stirring occasionally.
  6. Add fresh spinach and parmesan cheese, stirring until spinach wilts and cheese melts. Season with salt and pepper to taste.
  7. Serve immediately and enjoy!

Notes

You can substitute the Italian sausage with ground turkey or chicken for a lighter version. For a dairy-free option, swap the cream for coconut milk and use dairy-free cheese.
