- 16 ounces Italian sausage (mild or spicy)
- 1/2 medium onion, chopped
- 3–4 cloves garlic, minced
- 1/2 teaspoon crushed red pepper flakes (optional)
- 1 cup uncooked orzo pasta
- 2 cups chicken broth
- 1 cup heavy cream
- 1/2 cup freshly grated parmesan
- 2 cups fresh baby spinach, packed
- Salt and pepper to taste
Instructions
- In a large pot, crumble and cook the Italian sausage over medium-high heat until browned.
- Add chopped onion and cook until softened.
- Add garlic and crushed red pepper flakes, cooking for 30 seconds.
- Add orzo pasta and stir to coat with sausage and garlic.
- Pour in chicken broth and heavy cream, bring to a simmer. Cook uncovered for 10 minutes, stirring occasionally.
- Add fresh spinach and parmesan cheese, stirring until spinach wilts and cheese melts. Season with salt and pepper to taste.
- Serve immediately and enjoy!
Notes
You can substitute the Italian sausage with ground turkey or chicken for a lighter version. For a dairy-free option, swap the cream for coconut milk and use dairy-free cheese.
