Description
A cozy, creamy soup packed with Italian sausage, hearty white beans, tender potatoes, and plenty of veggies. Perfect for chilly nights, easy to make in one pot, and even better the next day.
Ingredients
- 1 lb Italian sausage (mild or spicy)
- 1 small sweet onion, diced
- 3 carrots, peeled and diced
- 3 stalks celery, diced
- 4 cloves garlic, minced
- 1 teaspoon poultry seasoning
- 1 teaspoon Italian seasoning
- 1 teaspoon kosher salt
- 1/2 teaspoon black pepper
- Pinch of red pepper flakes (optional)
- 3 tablespoons flour
- 4 gold potatoes, cubed (skins on)
- 6 cups chicken broth
- 2 cans white beans (drained and rinsed)
- 1 cup heavy cream
- 1 bunch Tuscan kale, ribs removed and sliced
- 2 tablespoons red wine vinegar
- Optional toppings: Fresh parsley, chives, or basil, grated Parmesan, extra black pepper, crusty bread or garlic toast
Instructions
- Brown the sausage:
- Heat a large soup pot over medium-high heat.
- Cook sausage until browned and crumbled.
- Remove and set aside on a paper towel-lined plate.
- Leave 1–2 tablespoons of fat in the pot for flavor.
- Sauté the vegetables:
- Add onion, carrots, and celery to the same pot.
- Cook for 4–6 minutes until softened and fragrant.
- Add garlic and seasonings:
- Stir in garlic, poultry seasoning, Italian seasoning, salt, pepper, and red pepper flakes.
- Cook for about 1 minute to bloom spices.
- Stir in flour:
- Sprinkle in flour and stir to coat vegetables evenly.
- Add potatoes and broth:
- Add cubed potatoes and chicken broth.
- Bring to a boil, then reduce to a simmer.
- Cook for 20 minutes or until potatoes are fork-tender.
- Finish the soup:
- Stir in white beans, kale, cream, and cooked sausage.
- Simmer for 5–10 more minutes until heated through.
- Add red wine vinegar just before serving.
- Taste and serve:
- Adjust salt and pepper if needed.
- Top with fresh herbs, cheese, or crusty bread.
Notes
Use pre-washed kale to save time. Mash a few potatoes if you prefer a thicker soup. Red wine vinegar at the end makes all the difference—don’t skip it! To make it dairy-free, sub heavy cream with coconut milk or omit it entirely. Store leftovers in the fridge for up to 4 days or freeze without cream for later.
