Description

A cozy, nutrient-packed Italian soup made with kale, beans, pasta, and seasonal veggies. Perfect for weeknights, family dinners, or meal prep.


Ingredients

Scale
  • Olive oil
  • Diced pancetta (optional)
  • 1 onion, diced
  • 2 celery stalks, diced
  • 2 carrots, diced
  • 3 garlic cloves, minced
  • 1 tablespoon Italian seasoning
  • 2 tablespoons tomato paste
  • 1 can (14 oz) crushed tomatoes
  • 1 can (14 oz) diced tomatoes
  • 4 cups chicken or vegetable broth
  • 1 can kidney beans, drained
  • 1 can cannellini beans, drained
  • 1 cup green beans or zucchini, chopped
  • ¾ cup elbow pasta (or small pasta)
  • 2 cups fresh kale, chopped
  • Fresh basil, chopped
  • 1 tablespoon lemon juice
  • Salt and pepper to taste
  • Parmesan cheese, for serving

Instructions

  1. In a large pot, cook pancetta until crispy. Set aside and leave drippings in the pot.
  2. Add olive oil, onion, celery, and carrots. Sauté until softened and fragrant.
  3. Stir in garlic, Italian seasoning, and tomato paste. Cook for 1 minute.
  4. Add crushed tomatoes, diced tomatoes, and broth. Bring to a boil, then simmer for 30 minutes.
  5. Add kidney beans, cannellini beans, green beans or zucchini, and pasta. Cook until pasta is just tender.
  6. Stir in kale and cook for a few minutes until softened.
  7. Remove from heat. Stir in fresh basil, lemon juice, salt, and pepper.
  8. Serve hot, topped with parmesan and pancetta if using.

Notes

For a vegetarian version, skip the pancetta and use vegetable broth. Cook pasta separately if freezing the soup to avoid mushy texture.
