Description

Juicy, tender, and baked in marinara with melty cheese on top, this Italian Meatloaf is a cozy, family-approved classic that brings comfort to any dinner table.


Ingredients

  • 1 lb ground beef
  • 1/2 lb mild Italian sausage, casing removed
  • 1 cup Italian-style breadcrumbs
  • 2 eggs
  • 1/2 cup finely chopped onion
  • 1/2 cup finely chopped carrot
  • 1/2 cup finely chopped celery
  • 3 cloves garlic, minced
  • 1/2 tsp fennel seeds
  • 1 tsp dried basil or a few fresh basil leaves, chopped
  • 1/2 cup grated Parmesan cheese
  • 1 cup marinara sauce, plus extra for serving
  • 1 cup shredded mozzarella cheese
  • Salt and pepper to taste
  • Olive oil for sautéing

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a skillet, heat olive oil over medium heat and sauté onion, carrot, and celery until soft, about 5–7 minutes. Add garlic and fennel seeds, cook 1 more minute. Let cool slightly.
  3. In a large bowl, combine ground beef, sausage, breadcrumbs, eggs, Parmesan, basil, sautéed vegetables, salt, and pepper. Mix until just combined—avoid overmixing.
  4. Form the mixture into a loaf shape and place it on a parchment-lined baking sheet or shallow baking dish.
  5. Spoon marinara sauce over the top of the loaf.
  6. Bake uncovered for 45–55 minutes or until internal temperature reaches 165°F (74°C).
  7. Remove from oven and sprinkle with mozzarella cheese. Return to oven for 5–7 minutes until melted and bubbly.
  8. Let rest for 10 minutes before slicing. Serve with extra marinara sauce if desired.

Notes

To make ahead, shape the loaf and refrigerate up to 24 hours before baking. Leftovers taste even better the next day—store in an airtight container for up to 4 days.
