Description

Gipfeli, the Swiss take on the classic croissant, offers a buttery, flaky texture that’s simply irresistible. Whether you’re making them for a special brunch or treating yourself to a comforting snack, these authentic Swiss pastries bring a touch of Swiss tradition to your kitchen.


Ingredients

Scale
  • 500g (4 cups) flour
  • 250g (1 cup + 2 tbsp) butter, cold
  • 7g (2 ¼ tsp) yeast, active dry or instant
  • 50g (¼ cup) sugar
  • 10g (2 tsp) salt
  • 120ml (½ cup) lukewarm milk
  • 120ml (½ cup) lukewarm water

Instructions

  1. Combine flour, sugar, salt, and yeast. Gradually add lukewarm milk and water to form a rough dough.
  2. Knead the dough for 8-10 minutes until smooth and elastic. Let it rise for 1-1.5 hours.
  3. Roll dough into a large rectangle and fold cold butter in an envelope fold. Repeat this 3 times with chilling in between.
  4. Cut the dough into triangles and roll them into crescent shapes.
  5. Proof for 30-45 minutes, then bake at 200°C (400°F) for 15-20 minutes until golden brown.

Notes

Ensure your butter stays cold during the lamination process to achieve flaky layers.
