  • 1 ½ tsp baking powder
  • ¼ tsp salt
  • ½ cup honey (raw and unfiltered if possible)
  • ½ cup butter, softened
  • ½ cup sugar
  • 2 large eggs (room temp is best)
  • 1 tsp vanilla extract
  • 1 cup diced peaches (fresh is fab, but canned totally works—just drain them well)
  • ½ cup milk
  • 8 oz cream cheese, softened
  • ¼ cup butter, softened
  • 3 cups powdered sugar (don’t skip the sifting—it helps!)
  • 2 tbsp honey
  • 1 tsp vanilla extract
  • 2 tbsp peach purée (optional, adds a nice fruity kick)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with 12 cupcake liners.
  2. In a bowl, whisk together the flour, baking powder, and salt. Set aside.
  3. In a larger bowl, beat together the butter, honey, and sugar until light and fluffy, about 3–4 minutes.
  4. Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
  5. Alternate adding the dry ingredients and milk, starting and ending with the dry ingredients. Mix just until combined—don’t overmix!
  6. Gently fold in the diced peaches.
  7. Scoop the batter into the cupcake liners, filling each about ⅔ of the way. Bake for 18–22 minutes, or until a toothpick comes out clean. Let cool for 5 minutes in the pan, then transfer to a wire rack to cool completely.
  8. For the frosting, beat the cream cheese and butter until smooth and creamy. Gradually add in the powdered sugar, honey, and vanilla, mixing slowly to avoid a sugar cloud. Stir in peach purée if desired.
  9. Once cupcakes are completely cool, frost them generously with the cream cheese frosting. Decorate with a peach slice, drizzle of honey, or leave them as-is.

Notes

If your peaches are extra juicy, pat them dry before adding to the batter to prevent soggy cupcakes.
