- 4 pieces chicken thighs or breasts (bone-in or boneless)
- 1 teaspoon salt
- 1 teaspoon black pepper
- ½ cup unsalted butter
- ½ cup honey
- 3 garlic cloves, minced
- 2 sprigs fresh thyme or rosemary
- 1 tablespoon lemon juice
Instructions
- Preheat oven to 400°F (200°C) and line a baking sheet with foil.
- Pat chicken dry with paper towels and season both sides with salt and pepper.
- Heat a skillet over medium-high heat with a little oil. Sear chicken skin-side down for 4 minutes, then flip and sear the other side for 1–2 minutes.
- Transfer skillet to oven (or move chicken to baking sheet) and roast for 12–15 minutes, or until internal temperature reaches 165°F (74°C).
- Meanwhile, melt butter in a saucepan over medium heat. Add honey, garlic, and thyme. Stir for 1–2 minutes, then add lemon juice.
- Brush cooked chicken generously with honey butter glaze. Broil for 2–3 minutes until glaze is bubbly and caramelized.
- Let rest for 5 minutes before serving.
Notes
Bone-in chicken adds juiciness, but boneless works well too. Don’t skip the sear for that golden crust. For a twist, add chili flakes to the glaze or try rosemary instead of thyme.
