Whether you’re meal prepping for the week or putting together a cozy family dinner, these vegan, gluten-free falafel are easy to make and full of comforting flavor. All you need is a few pantry staples and a little patience.
Ingredients
- 1 cup dried chickpeas
- ½ large onion, roughly chopped (about 1 cup)
- ½ cup finely chopped fresh parsley
- ¼ cup finely chopped cilantro
- 1 teaspoon salt
- 4 cloves garlic
- 2 teaspoons cumin
- 1 teaspoon ground coriander
- 1 teaspoon baking powder
- 4 tablespoons chickpea flour (or regular flour)
Instructions
- Place dried chickpeas in a large bowl, cover with water, and soak for 24 hours. Drain well.
- Add soaked chickpeas, onion, parsley, cilantro, garlic, salt, cumin, and coriander to a food processor. Pulse until finely chopped but not puréed.
- Transfer mixture to a bowl. Add chickpea flour and baking powder. Stir gently to combine.
- Use a tablespoon or scoop to shape mixture into balls or patties. Place on parchment-lined tray and refrigerate for 1 hour.
- Heat oil in a skillet over medium heat. Fry falafel in batches, turning once, until golden and crisp (about 2–3 minutes total).
- Drain on paper towels. Serve warm with pita, salad, or dipping sauce of choice.
Notes
Never use canned chickpeas—they’re too soft. Chill the shaped falafel before frying to help them stay intact. For a lighter version, bake at 400°F (200°C) for 25–30 minutes or air fry at 375°F (190°C) for 12–14 minutes.
