- 1 cup chopped mushrooms (mix of cremini and shiitake)
- 1 cup finely diced carrots
- 1 cup wilted spinach
- 1 medium sautéed onion, cooked until translucent
- 2 cloves minced garlic
- 1 cup chopped chestnuts
- 1 teaspoon fresh thyme
- Salt and pepper to taste
- For the Pastry and Assembly:
- 1 package puff pastry sheets, thawed
- 2 tablespoons Dijon mustard
- 1 large egg, beaten (for brushing)
- 2 tablespoons olive oil
Instructions
- Prep the Oven and Pan:
- Preheat oven to 400°F (200°C).
- Line a baking sheet with parchment paper and heat olive oil in a large skillet.
- Cook the Veggie Filling:
- Sauté onion and garlic for 3 minutes until soft.
- Add mushrooms and carrots; cook for 5 minutes.
- Stir in spinach, thyme, salt, and pepper.
- Remove from heat; stir in chestnuts and Dijon mustard.
- Let the mixture cool completely.
- Assemble the Wellington:
- Roll out puff pastry into a 12×16-inch rectangle on a floured surface.
- Spoon cooled filling down the center.
- Fold edges over and seal.
- Brush with egg wash and score top gently.
- Place seam-side down on baking sheet.
- Bake:
- Bake for 25–30 minutes until golden and crisp.
- Let rest 10 minutes before slicing.
Notes
Cool the filling before assembly to avoid sogginess. Keep puff pastry cold and score the top to release steam. Sprinkle with herbs or seeds for extra flair. Brush with melted butter instead of egg for a deeper color if desired.
