Ingredients

  • 20 ounces day-old bread cubes (half Italian, half sourdough – about 12 cups)
  • 12 tablespoons unsalted butter
  • 2 cups yellow onions, chopped
  • 1¼ cups celery, chopped
  • 2 leeks, rinsed and thinly sliced (about 2 cups)
  • 8 cloves garlic, minced
  • 3 tablespoons chopped sage
  • 2 tablespoons chopped thyme
  • 1 tablespoon chopped rosemary
  • ½ cup parsley, chopped
  • 2 large eggs, lightly beaten
  • 2 to cups chicken or vegetable broth
  • Salt and black pepper to taste

Instructions

  1. Preheat oven to 350°F and grease a 9×13 baking dish. Cut bread into 1-inch cubes and place in a large bowl.
  2. In a large skillet, melt butter over medium heat. Add onions, celery, and leeks. Cook 5 minutes until softened. Add garlic and cook 4–5 minutes more. Stir in sage, thyme, and rosemary and cook 30 seconds.
  3. Pour sautéed mixture over bread cubes. Add parsley. Once slightly cooled, toss gently. Pour in 2 cups broth and mix. Add eggs and mix again. Add extra ½ cup broth if needed—the bread should be moist, not soggy.
  4. Transfer mixture to the prepared baking dish. Bake uncovered 45–55 minutes, until golden and crispy on top. Cover loosely with foil if browning too quickly.

Notes

Make ahead by assembling and refrigerating the day before. Bake straight from the fridge with extra time if needed. Use fresh herbs for best flavor, and combine Italian and sourdough breads for ideal texture.
