This Healthy Eggplant Parmesan Bake is a lighter take on the classic Italian comfort food. Made with roasted eggplant instead of fried, melty mozzarella, rich marinara, and a crispy breadcrumb topping, it’s a cozy, family-friendly dinner that’s perfect for weeknights.

- 2 medium eggplants (about 6–7 inches each), sliced into twelve ½-inch rounds
- 2½ tablespoons olive oil, divided
- ½ cup shredded Parmesan cheese
- ½ cup seasoned Italian breadcrumbs
- 2 cups shredded mozzarella cheese
- 2 cups marinara sauce
- Salt and black pepper, to taste
- Optional: fresh basil for garnish
Instructions
- Slice eggplant into ½-inch rounds. Lay on a cooling rack over a baking sheet, salt both sides, place a second sheet pan on top, and let rest for 30 minutes. Pat dry with paper towels.
- Preheat oven to 375°F (190°C). Arrange eggplant slices on a parchment-lined baking sheet. Brush both sides with 2 tablespoons olive oil and season with salt and pepper. Roast for 20 minutes, flipping halfway.
- In a small bowl, mix breadcrumbs, Parmesan, and ½ tablespoon olive oil until crumbly.
- In a 9×13-inch baking dish, spread 1 cup of marinara sauce. Layer 6 roasted eggplant slices. Top with a spoonful of sauce, some breadcrumb mixture, and mozzarella. Repeat with remaining eggplant and toppings.
- Bake for 18–22 minutes, until cheese is melted and bubbly. Broil for 1–2 minutes for a golden top if desired.
- Let rest for 5–8 minutes. Garnish with fresh basil and serve warm.
Notes
Great for meal prep. Store leftovers in an airtight container in the fridge for up to 4 days. Reheat in the oven or microwave. Customize with other veggies or make it gluten-free with GF breadcrumbs.
