Description

This Healthy Eggplant Parmesan Bake is a lighter take on the classic Italian comfort food. Made with roasted eggplant instead of fried, melty mozzarella, rich marinara, and a crispy breadcrumb topping, it’s a cozy, family-friendly dinner that’s perfect for weeknights.


Ingredients

  • 2 medium eggplants (about 67 inches each), sliced into twelve ½-inch rounds
  • 2½ tablespoons olive oil, divided
  • ½ cup shredded Parmesan cheese
  • ½ cup seasoned Italian breadcrumbs
  • 2 cups shredded mozzarella cheese
  • 2 cups marinara sauce
  • Salt and black pepper, to taste
  • Optional: fresh basil for garnish

Instructions

  1. Slice eggplant into ½-inch rounds. Lay on a cooling rack over a baking sheet, salt both sides, place a second sheet pan on top, and let rest for 30 minutes. Pat dry with paper towels.
  2. Preheat oven to 375°F (190°C). Arrange eggplant slices on a parchment-lined baking sheet. Brush both sides with 2 tablespoons olive oil and season with salt and pepper. Roast for 20 minutes, flipping halfway.
  3. In a small bowl, mix breadcrumbs, Parmesan, and ½ tablespoon olive oil until crumbly.
  4. In a 9×13-inch baking dish, spread 1 cup of marinara sauce. Layer 6 roasted eggplant slices. Top with a spoonful of sauce, some breadcrumb mixture, and mozzarella. Repeat with remaining eggplant and toppings.
  5. Bake for 18–22 minutes, until cheese is melted and bubbly. Broil for 1–2 minutes for a golden top if desired.
  6. Let rest for 5–8 minutes. Garnish with fresh basil and serve warm.

Notes

Great for meal prep. Store leftovers in an airtight container in the fridge for up to 4 days. Reheat in the oven or microwave. Customize with other veggies or make it gluten-free with GF breadcrumbs.
