- 1 teaspoon salt
- ½ teaspoon black pepper
- ½ teaspoon garlic powder
- ½ teaspoon chili powder
- ½ teaspoon dried oregano
- For the Potatoes:
- 2 tablespoons olive oil or avocado oil
- 4 cups small diced potatoes
- For the Sauce:
- 1 cup canned tomato sauce (8 oz)
- ½ cup water
- 2 teaspoons minced garlic
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- ½ teaspoon dried parsley
- ½ teaspoon salt
- ½ teaspoon black pepper
- ½ teaspoon onion powder
Instructions
- In a large skillet over medium-high heat, cook the ground turkey. Break it apart with a spoon and season with salt, pepper, garlic powder, chili powder, and oregano. Cook until no longer pink. Remove from skillet and set aside.
- In the same skillet, add olive oil and heat until shimmering. Add diced potatoes and sauté for 5–10 minutes, stirring occasionally, until golden brown and crispy on the edges.
- Return the cooked turkey to the skillet. Add tomato sauce, water, minced garlic, oregano, basil, parsley, salt, pepper, and onion powder.
- Stir everything together, cover the skillet, and simmer over medium heat for about 5 minutes, or until the potatoes are tender and the sauce thickens slightly.
- Taste and adjust seasoning if needed. Serve as-is or with rice, roasted veggies, or a fried egg on top.
