- 2 pounds carrots, peeled and cut into similar pieces (or use baby carrots)
- 4 tablespoons unsalted butter, browned
- 2 tablespoons honey
- 2 teaspoons fresh thyme (or 1 teaspoon dried thyme)
- 1/2 teaspoon salt
- 1/4 teaspoon freshly ground pepper
- 1/4 cup water
Instructions
- Peel and cut the carrots into similar-size pieces, or rinse and pat dry if using baby carrots.
- In a large skillet, melt butter over medium heat. Stir often until it turns golden brown and smells nutty, about 5 minutes.
- Lower the heat and stir in honey, thyme, salt, pepper, and water until combined.
- Add the carrots and toss well to coat in the glaze.
- Cover and cook on medium-low for 10 to 12 minutes, stirring occasionally, until the carrots are just tender.
- Uncover the skillet, raise the heat, and cook for an additional 3 to 5 minutes until the glaze thickens and clings to the carrots.
- Transfer to a serving dish and garnish with additional thyme if desired.
Notes
To prep ahead, cook the carrots completely and refrigerate. Reheat on the stovetop with a splash of water before serving. For variation, add cinnamon or nutmeg for warmth, or try maple syrup instead of honey for a cozier twist.
