Description

Wet Ingredients

  • ½ cup dark brown sugar
  • ½ cup granulated sugar

Cream Cheese Frosting

  • 6 ounces brick-style cream cheese
  • 2 tablespoons unsalted butter
  • 1½ cups confectioners’ sugar
  • 1 teaspoon vanilla extract
  • A pinch of ginger, cinnamon, and allspice

Instructions

  1. Preheat oven: Preheat to 350°F (177°C) and line a 9×13-inch baking pan with parchment paper, leaving overhang for easy removal.
  2. Mix dry ingredients: In a large bowl, whisk together flour, baking soda, and all spices.
  3. Combine wet ingredients: In a separate bowl, whisk melted butter, sugars, and molasses. Add egg and vanilla.
  4. Make the dough: Combine wet and dry mixtures until a thick, shiny dough forms.
  5. Bake: Spread dough evenly in the pan. Bake 23–26 minutes, until just set. Cool completely before frosting.
  6. Frost: Beat cream cheese and butter until creamy. Add sugar, vanilla, and spices. Beat until smooth and spread over cooled bars. Chill 30 minutes to set before slicing.

Notes

Avoid blackstrap molasses for best flavor. Slight underbaking keeps the bars soft. Store frosted bars in the fridge for up to 5 days or freeze for up to 3 months.
