Ingredients

  • 1.5 pounds of pork tenderloin
  • 4 cloves garlic, minced
  • 1 tablespoon fresh rosemary, chopped
  • 1 tablespoon fresh thyme, chopped
  • 1 tablespoon fresh parsley, chopped
  • 2 tablespoons olive oil
  • 1 teaspoon Dijon mustard
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ¼ teaspoon red pepper flakes (optional)
  • 1 lemon, zested and juiced
  • 1 cup low-sodium chicken broth

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a small bowl, mix garlic, rosemary, thyme, parsley, olive oil, Dijon mustard, salt, black pepper, red pepper flakes (optional), lemon zest, and lemon juice.
  3. Pat the pork tenderloin dry and rub the marinade on all sides. Let it marinate for at least 30 minutes, or up to overnight for more flavor.
  4. Heat a tablespoon of olive oil in a large oven-safe skillet over medium-high heat. Sear the pork on all sides for 2-3 minutes until golden-brown.
  5. Pour chicken broth around the pork in the skillet. Transfer skillet to the preheated oven and roast for 20-25 minutes until the internal temperature reaches 145°F (63°C).
  6. Let the pork rest covered with aluminum foil for 10 minutes. Slice into medallions and serve with pan juices.

Notes

You can substitute the tenderloin with a pork loin roast, though it may take longer to cook. Feel free to adjust the herbs as desired.
