Description

A cheesy, veggie-packed dinner the whole family will love. Made with fresh summer produce like eggplant, tomatoes, and bell pepper, this eggplant casserole is comforting, flavorful, and naturally vegetarian.


Ingredients

  • 2 tablespoons butter
  • 2 tablespoons olive oil
  • 1 large onion, diced
  • 2 garlic cloves, minced
  • 1 yellow bell pepper, diced
  • 2 portobello mushroom caps, sliced into bite-sized pieces
  • 3 large tomatoes, diced (or one 14.5 oz can of diced tomatoes, drained)
  • 1 tablespoon fresh parsley, finely chopped (or 1 teaspoon dried)
  • 1 tablespoon fresh basil, finely chopped (or 1 teaspoon dried)
  • 1/2 tablespoon fresh thyme (or 1/2 teaspoon dried)
  • 1/4 cup vegetable oil
  • 2 medium eggplants, cut into bite-sized cubes
  • 1 tablespoon salt
  • 1 tablespoon flour
  • 1/2 cup grated Parmesan cheese
  • 4 ounces fresh mozzarella, sliced or shredded

Instructions

  1. Preheat your oven to 375°F and lightly grease a 2 ½-quart casserole dish.
  2. In a large skillet, heat butter and olive oil over medium-low. Add onion and cook for 3 minutes. Stir in bell pepper and garlic, and cook 3 minutes more.
  3. Add mushrooms and cook 3–4 minutes. Stir in tomatoes, parsley, basil, and thyme. Simmer for 2–3 minutes. Transfer mixture to a bowl and set aside.
  4. In the same skillet, heat vegetable oil over medium. Add eggplant and salt. Cook for 10–12 minutes until browned and soft. Sprinkle in flour and stir to coat.
  5. Add tomato mixture back to the skillet and bring to a simmer.
  6. Spoon one-third of the mixture into baking dish. Sprinkle with Parmesan and mozzarella. Repeat layering with next third and cheese, then final layer and remaining cheese.
  7. Bake uncovered for 30 minutes, until bubbling and cheese is golden. Let rest a few minutes before serving.

Notes

Optional add-ins include spinach or kale, zucchini, marinara, or red pepper flakes. Make it ahead by assembling and refrigerating up to 24 hours. Leftovers reheat beautifully.
