- 1 (9-inch) refrigerated pie crust (store-bought or homemade)
- 1 (15 oz) can pumpkin puree (not pie filling)
- 1 (14 oz) can sweetened condensed milk
- 2 large eggs
- 2 ½ teaspoons pumpkin pie spice
- ¼ teaspoon salt
Instructions
- Preheat oven to 425°F and place rack on lowest level. Prepare your pie crust in a 9-inch pie dish.
- In a bowl, whisk together pumpkin puree, sweetened condensed milk, eggs, pumpkin pie spice, and salt until smooth and creamy.
- Pour the filling into the crust and gently level it. Place dish on a baking sheet.
- Bake at 425°F for 15 minutes, then reduce oven to 350°F and continue baking for 35–40 minutes until center is just set.
- Cool pie on a wire rack for at least 2 hours before slicing. For a chilled version, refrigerate for an additional 2 hours after cooling.
Notes
For best results, don’t use pumpkin pie filling. To avoid a soggy crust, use the lowest oven rack or blind bake a homemade crust. Let the pie cool fully before slicing for a clean cut. Add maple syrup or a cream cheese layer for variations.
