This homemade Pumpkin Gnocchi recipe combines soft, pillowy gnocchi with the rich, earthy flavor of pumpkin, all brought together with a savory butter and sage sauce. A perfect dish for fall dinners or cozy nights in.

- 1 cup pumpkin puree
- 2 cups all-purpose flour
- 1 large egg
- 1/2 teaspoon salt
- 2 tablespoons butter
- 1/4 cup grated Parmesan cheese
- Fresh sage leaves (to taste)
Instructions
- Mix pumpkin puree, egg, and salt in a large bowl until combined.
- Gradually add flour and mix until the dough comes together. Knead for a few minutes until smooth.
- Roll dough into ropes and cut into 1-inch pieces. Press with a fork to create the gnocchi shape.
- Boil gnocchi in salted water. Once they float, remove with a slotted spoon and drain.
- In a skillet, melt butter and cook sage leaves until fragrant. Add gnocchi and toss to coat in sage butter.
- Serve topped with freshly grated Parmesan cheese and extra sage leaves.
Notes
For a vegan version, substitute the egg with a flax egg and use vegan butter and cheese.
