Description

This homemade Pumpkin Gnocchi recipe combines soft, pillowy gnocchi with the rich, earthy flavor of pumpkin, all brought together with a savory butter and sage sauce. A perfect dish for fall dinners or cozy nights in.


Ingredients

  • 1 cup pumpkin puree
  • 2 cups all-purpose flour
  • 1 large egg
  • 1/2 teaspoon salt
  • 2 tablespoons butter
  • 1/4 cup grated Parmesan cheese
  • Fresh sage leaves (to taste)

Instructions

  1. Mix pumpkin puree, egg, and salt in a large bowl until combined.
  2. Gradually add flour and mix until the dough comes together. Knead for a few minutes until smooth.
  3. Roll dough into ropes and cut into 1-inch pieces. Press with a fork to create the gnocchi shape.
  4. Boil gnocchi in salted water. Once they float, remove with a slotted spoon and drain.
  5. In a skillet, melt butter and cook sage leaves until fragrant. Add gnocchi and toss to coat in sage butter.
  6. Serve topped with freshly grated Parmesan cheese and extra sage leaves.

Notes

For a vegan version, substitute the egg with a flax egg and use vegan butter and cheese.
