These chicken enchiladas are the perfect combination of flavorful chicken, gooey cheese, and tangy enchilada sauce. A simple yet delicious Mexican-inspired dish.


Ingredients

  • 2 cups shredded cooked chicken
  • ¼ cup enchilada sauce
  • Salt to taste
  • Pepper to taste
  • 8 flour tortillas
  • 2 cups shredded cheese (cheddar or Mexican blend)
  • 1 ½ cups enchilada sauce
  • Sour cream, chopped cilantro, and lime for garnish (optional)

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a large bowl, mix shredded chicken with ¼ cup of enchilada sauce, salt, and pepper to taste.
  3. Warm tortillas by wrapping them in a damp paper towel and microwaving for 1 minute, flipping halfway through.
  4. Place a tortilla on a flat surface, add a scoop of the chicken mixture, and sprinkle with cheese. Roll it up tightly and place seam-side down in a baking dish.
  5. Pour remaining enchilada sauce over the rolled tortillas and top with remaining cheese.
  6. Bake for 20 minutes, or until the cheese is bubbly and golden.
  7. Serve with sour cream, cilantro, and lime for garnish (optional).

Notes

These enchiladas can be topped with your favorite salsa or hot sauce for an extra kick.
