A bold, comforting one-skillet Cajun classic made with sausage, ground beef, veggies, and rice—perfect for weeknights, potlucks, and cozy dinners.

- 1 tablespoon olive oil
- 12 ounces pork or chicken sausage, sliced
- ½ pound ground beef
- 1 large onion, chopped
- 1 large red bell pepper, chopped
- 2 stalks celery, chopped
- 3 cloves garlic, minced
- 1 ½ cups long-grain white rice (rinsed)
- 3 cups chicken broth
- 2 teaspoons Cajun seasoning
- Salt and pepper to taste
Instructions
- Rinse the rice under cold water until the water runs clear. Set aside.
- In a large skillet, heat olive oil over medium-high heat. Add sliced sausage and cook for 5–7 minutes until browned. Remove and set aside.
- Add ground beef to the same skillet. Cook until no longer pink, breaking it apart with a spatula. Drain excess fat.
- Stir in the chopped onion, bell pepper, celery, and garlic. Sauté for 5–6 minutes until softened and fragrant.
- Return the sausage to the skillet. Add the rinsed rice, chicken broth, Cajun seasoning, salt, and pepper. Stir to combine.
- Bring to a boil, then cover and reduce heat to low. Simmer for 20–25 minutes until rice is tender and liquid is mostly absorbed.
- Remove from heat and let it sit covered for 5 minutes. Fluff with a fork before serving.
Notes
Rinse rice thoroughly for fluffy grains. Adjust spice level to taste, and feel free to customize with your favorite sausage or add-ins. Leftovers reheat beautifully!
