Description

These adorable Halloween cupcakes are perfect for any Halloween celebration. They feature a spooky Oreo base and a fluffy marshmallow frosting, topped with fun decorations like tombstone-shaped cookies and mallow pumpkins.


Ingredients

  • 12 Oreos (one for each cupcake base)
  • ¾ cup cake flour
  • ¾ cup all-purpose flour
  • ¾ cup sugar
  • 1¼ teaspoon baking powder
  • ½ teaspoon salt
  • ½ cup cold butter, cut into small pieces
  • 2 large eggs
  • ¾ cup milk
  • 1 teaspoon vanilla extract
  • 3.4 ounces marshmallow fluff (½ of a 7-ounce container)
  • ½ cup butter, softened to room temperature
  • 2½ cups powdered sugar
  • 1 teaspoon vanilla extract
  • 12 tablespoons cream
  • 10 Oreos (finely crushed for mixing into the frosting)
  • Crushed Oreos for garnish
  • Oreo cookies cut into tombstone shapes for decoration
  • Mallow pumpkins for that perfect Halloween touch

Instructions

  1. Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners. Place one whole Oreo cookie in the bottom of each liner.
  2. In a large bowl, combine cake flour, all-purpose flour, sugar, baking powder, and salt. Whisk together to ensure an even mix.
  3. Mix in the cold butter until the mixture resembles coarse crumbs.
  4. Add eggs, one at a time, mixing well after each addition.
  5. In a separate bowl, combine milk and vanilla extract. Add half of this mixture to the batter and mix until smooth. Then add the remaining milk mixture and continue mixing until smooth.
  6. Scoop the batter into the muffin tin, filling each cup about ½ to ⅔ full. Bake for 20 minutes or until a toothpick inserted comes out clean. Let cool completely.
  7. For the frosting: Beat together marshmallow fluff and butter until light and fluffy. Gradually add powdered sugar and vanilla extract, mixing until smooth.
  8. Fold in crushed Oreos. Pipe the frosting onto cooled cupcakes.
  9. Decorate with more crushed Oreos, tombstone-shaped cookies, and mallow pumpkins.

Notes

Feel free to get creative with the decorations! You can use food coloring to make the frosting black, orange, or purple for a more festive look.
