  • For the Beef Layer:
  • Olive oil
  • 1 large white onion, finely diced
  • 2 cloves garlic, finely diced
  • 1.6 lb (750 g) lean ground beef
  • 2 tablespoons tomato paste
  • 1 cup tomato passata
  • ½ cup dry red wine (optional)
  • ½ cup beef stock
  • Fresh parsley, thyme, 1 bay leaf
  • ½ teaspoon ground cinnamon
  • ½ teaspoon sugar
  • Salt and pepper, to taste
  • For the Béchamel Sauce:
  • 4 tablespoons butter
  • 4 tablespoons flour
  • 3 cups milk (room temperature)
  • ½ teaspoon salt
  • ¼ teaspoon ground nutmeg
  • Pinch of white pepper
  • ½ cup grated pecorino or parmesan cheese
  • 2 egg yolks
  • For the Veg Layers:
  • 2 potatoes, sliced evenly
  • 2 zucchini, sliced
  • 2 eggplants, sliced
  • Olive oil or vegetable oil (for frying or roasting)
  • Salt, pepper, fresh parsley

Instructions

  1. Make the Beef Layer: Heat olive oil in a large pot over medium heat. Sauté onion until soft, add garlic, then ground beef. Cook until browned. Stir in tomato paste, wine, passata, stock, herbs, cinnamon, sugar, salt, and pepper. Simmer for 30 minutes until thickened.
  2. Prepare the Vegetables: Slice potatoes, zucchini, and eggplant. Salt the eggplant and zucchini, press between paper towels to remove moisture. Fry or roast vegetables until tender. Drain or blot excess oil.
  3. Make the Béchamel Sauce: In a saucepan, melt butter. Whisk in flour and cook 1 minute. Gradually add milk while whisking until thickened. Season with salt, nutmeg, and pepper. Remove from heat and stir in cheese, then whisk in egg yolks quickly.
  4. Assemble the Moussaka: Preheat oven to 350°F (180°C). In a greased baking dish, layer potatoes, season with salt and pepper. Add zucchini, then half of the eggplant. Spread beef mixture on top. Add remaining eggplant. Pour béchamel sauce over everything. Sprinkle with cheese.
  5. Bake for 35–45 minutes, until golden brown. Let rest for 15 minutes before serving for the best texture and flavor.

Notes

For a lighter version, bake the vegetables instead of frying. Moussaka tastes even better the next day, so it’s perfect for meal prep. You can also swap the beef for ground lamb or make it vegetarian by using lentils.
