Description

All the classic flavors of stuffed peppers — without the fuss! This hearty one-pot Deconstructed Stuffed Peppers Skillet is a busy mom’s dream: quick, cozy, and made with just a handful of ingredients.


Ingredients

  • 1 pound ground turkey
  • 4 large bell peppers, cut into 1–2 inch chunks
  • 1 ½ cups uncooked rice (white or brown)
  • 24 oz marinara sauce
  • 1 ½ cups low-sodium chicken broth
  • Avocado oil or any neutral oil for frying
  • Optional: Fresh parsley, chopped
  • Optional: Sour cream

Instructions

  1. Heat a large pot or deep skillet over medium-high heat. Add a drizzle of oil and cook the ground turkey for about 5 minutes, breaking it into small pieces until fully browned. Remove and set aside.
  2. In the same pot, add a bit more oil and sauté the bell peppers for about 5 minutes, allowing them to brown slightly.
  3. Return the cooked turkey to the pot. Add uncooked rice, marinara sauce, and chicken broth. Stir to combine.
  4. Cover and bring to a boil. Reduce heat to low and simmer until rice is tender — 12–15 minutes for white rice, or 30–40 minutes for brown rice. Stir occasionally.
  5. Once the rice is tender, serve hot. Garnish with fresh parsley or a dollop of sour cream if desired.

Notes

Use pre-chopped peppers for speed. Rinse rice before cooking to reduce starchiness. Adjust simmer time based on rice type. Add cheese, spice, or extra veggies for variety.
