These Dark Chocolate Raspberry Bites are the perfect balance of sweet and tart, made with fresh or frozen raspberries, dark chocolate, and chia seeds. They’re easy to make, no-bake, and customizable, making them a healthy-ish indulgence you can feel good about.
Ingredients
- Fresh or frozen raspberries
- Chia seeds
- Dark chocolate chips or chunks (at least 60% cacao)
- Coconut oil (optional)
- Flaky sea salt (optional)
Instructions
- Line a small baking sheet with parchment paper.
- Mash the raspberries in a small bowl with a fork.
- Stir in chia seeds and let sit for 5-10 minutes to thicken.
- Scoop the mixture onto the baking sheet and shape into discs.
- Freeze for 45-60 minutes until solid.
- Melt the chocolate with optional coconut oil.
- Dunk each raspberry disc in the melted chocolate and place back on the parchment paper.
- Sprinkle with sea salt, if desired.
- Freeze for another 30 minutes to set the chocolate.
Notes
Store these bites in an airtight container in the freezer. Let them sit for 1-2 minutes at room temperature before eating to soften the chocolate.
