- 1 can (15 oz) black beans, drained and rinsed
- 1/2 cup salsa (mild or spicy)
- 2/3 cup shredded cheese (cheddar or Mexican blend)
- 5–6 6-inch flour tortillas
- 2 teaspoons neutral oil (like avocado or vegetable oil)
Instructions
- Mash the black beans with a fork or potato masher and mix with salsa.
- Spread the black bean mixture on one half of each tortilla, top with shredded cheese, and fold the tortilla in half.
- Heat oil in a skillet over medium heat. Cook tacos for 4-5 minutes on one side until golden, then flip and cook for another 2-3 minutes on the other side.
- Repeat with remaining tacos, adding more oil as needed.
