Description

These crispy black bean tacos are quick, easy, and bursting with flavor. Perfect for a busy weeknight or a fun family meal.


Ingredients

  • 1 can (15 oz) black beans, drained and rinsed
  • 1/2 cup salsa (mild or spicy)
  • 2/3 cup shredded cheese (cheddar or Mexican blend)
  • 56 6-inch flour tortillas
  • 2 teaspoons neutral oil (like avocado or vegetable oil)

Instructions

  1. Mash the black beans with a fork or potato masher and mix with salsa.
  2. Spread the black bean mixture on one half of each tortilla, top with shredded cheese, and fold the tortilla in half.
  3. Heat oil in a skillet over medium heat. Cook tacos for 4-5 minutes on one side until golden, then flip and cook for another 2-3 minutes on the other side.
  4. Repeat with remaining tacos, adding more oil as needed.
