A warm, comforting one-pot vegan lasagna soup that’s creamy, hearty, and ready in 30 minutes. Perfect for busy weeknights and family dinners.


Ingredients

  • 1 small onion, diced
  • 4 garlic cloves, minced
  • 1½ teaspoons Italian seasoning
  • 1 teaspoon onion powder
  • ½ teaspoon paprika
  • 1¼ teaspoons sea salt (or to taste)
  • Black pepper to taste
  • ½ cup dried red lentils (rinsed)
  • 5 cups low-sodium vegetable broth or water
  • ½ cup dairy-free milk or cream
  • ½ cup tomato sauce (passata works beautifully)
  • 1 tablespoon tomato paste
  • 6 lasagna noodles, broken into bite-sized pieces (gluten-free if needed)
  • ¼ cup nutritional yeast
  • â…“ cup cashew butter (or almond butter/vegan sour cream)
  • 1 tablespoon lemon juice
  • Red pepper flakes (optional, for heat)
  • Vegan ricotta or mozzarella (optional, for garnish)
  • Fresh herbs like parsley or basil for garnish

Instructions

  1. Rinse the lentils under cold water and set aside.
  2. In a large pot, heat oil over medium heat. Add diced onion and sauté for 3-4 minutes. Stir in garlic and cook for 1 minute.
  3. Add Italian seasoning, onion powder, paprika, salt, pepper, red lentils, tomato sauce, tomato paste, cashew butter, and broth. Whisk together and bring to a gentle boil.
  4. Break lasagna noodles into small pieces and stir into the soup. Simmer for 9-10 minutes until noodles are tender.
  5. Turn off heat. Stir in dairy-free milk or cream, lemon juice, and nutritional yeast.
  6. Taste and adjust seasoning with salt, pepper, or red pepper flakes.
  7. Serve hot, garnished with vegan ricotta or mozzarella and fresh herbs.

Notes

To make nut-free, substitute cashew butter with sunflower seed butter or vegan cream. For extra veggies, add spinach or kale at the end. Soup will thicken as it sits—add broth to loosen when reheating.
