  • 2 tablespoons extra-virgin olive oil (or any mild cooking oil)
  • 4 boneless, skinless chicken breasts (or thighs)
  • 1 teaspoon kosher salt
  • ½ teaspoon black pepper
  • 1 teaspoon dried oregano
  • For the sauce:
  • 2 tablespoons butter
  • 3 cloves garlic, minced
  • 1 cup cherry tomatoes, halved
  • 2 cups baby spinach
  • 1 cup heavy cream
  • ½ cup freshly grated Parmesan
  • For serving:
  • Lemon wedges
  • Optional garnish: chopped parsley or basil

Instructions

  1. Heat oil in a large skillet over medium heat until shimmering.
  2. Pat chicken dry and season with salt, pepper, and oregano.
  3. Sear chicken for 8 minutes per side until golden and cooked through. Transfer to a plate and keep warm.
  4. Add butter to the same skillet. Stir in garlic and sauté for 1 minute until fragrant.
  5. Add cherry tomatoes and cook 3–4 minutes until they begin to burst.
  6. Stir in spinach and let it wilt.
  7. Pour in cream and add Parmesan. Stir until smooth and let simmer 3 minutes to thicken.
  8. Return chicken to skillet. Spoon sauce over and simmer 5–7 minutes more.
  9. Finish with lemon wedges and fresh herbs if using. Serve hot.

Notes

For a dairy-free version, use coconut cream, plant-based butter, and nutritional yeast instead of Parmesan. Try adding mushrooms for extra depth or red pepper flakes for heat. Serve over pasta, mashed potatoes, or rice for a complete meal.
