- 2 tablespoons olive oil
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 can (28 ounces) crushed tomatoes
- 2 cups vegetable broth
- 1 cup heavy cream
- 1 teaspoon dried basil
- Salt and pepper, to taste
- Fresh basil leaves, for garnish
Instructions
- Heat olive oil in a large pot over medium heat. Add the chopped onion and cook until soft and translucent, about 5 minutes. Add garlic and sauté for another minute.
- Pour in crushed tomatoes and vegetable broth. Stir and bring to a gentle simmer.
- Add dried basil, salt, and pepper. Simmer uncovered for 15 minutes.
- Use an immersion blender to puree the soup until smooth, or blend in batches in a blender.
- Reduce heat and stir in the heavy cream. Warm gently without boiling.
- Taste and adjust seasoning. Garnish with fresh basil leaves before serving.
Notes
Use low-sodium broth to better control salt levels. For a thicker soup, simmer longer before blending. A pinch of sugar can balance acidity if needed. This soup freezes well for up to 3 months.
