Ingredients

  • 3 slices of bacon, cooked and chopped
  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 1 pound ground beef
  • 1 (10 oz) can diced tomatoes with green chilies
  • 1 (15 oz) can ranch-style beans
  • 1 (15 oz) can corn, drained
  • 2 medium potatoes, diced small
  • 2 cups beef broth
  • 3/4 teaspoon granulated garlic
  • 1/2 teaspoon ground cumin
  • Salt and freshly ground black pepper to taste
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 3/4 cup evaporated milk

Instructions

  1. Cook bacon in a skillet over medium-high heat until crisp. Transfer to paper towels, chop, and set aside.
  2. In a small saucepan, melt butter over medium heat. Whisk in flour and cook for 1 minute. Slowly add evaporated milk while whisking until thickened. Set aside.
  3. In a large pot or Dutch oven, heat olive oil and cook diced onion until soft.
  4. Add ground beef, breaking it up as it cooks. Cook until no pink remains, then drain excess fat.
  5. Stir in chopped bacon, diced tomatoes with green chilies, ranch-style beans, corn, and diced potatoes.
  6. Pour in beef broth. Add garlic, cumin, salt, and black pepper. Stir to combine.
  7. Bring to a gentle boil, then reduce heat. Cover and simmer for 20–30 minutes, until potatoes are tender.
  8. Slowly stir in the creamy mixture. Heat a few more minutes until fully blended and smooth.
  9. Serve hot with toppings like shredded cheese or sour cream.

Notes

Store leftovers in the fridge for up to 3 days or freeze the base soup for 3 months. Add cream mixture after thawing for best texture. For more heat, stir in chipotle or adobo. Thicken naturally by mashing some potatoes or simmering uncovered.
