- Pinch of chili powder, cumin, or smoked paprika
- Oil or butter for cooking

Instructions
- In a bowl, mix cottage cheese and shredded cheese.
- Add optional fillings and spices if using.
- Lay one tortilla flat and spread the mixture over one half.
- Fold the tortilla over and press gently.
- Heat a skillet over medium heat and add oil or butter.
- Cook the quesadilla for 2 to 4 minutes until golden.
- Flip and cook another 2 to 3 minutes until crispy and melted.
- Remove from pan and let rest for 1 minute.
- Slice into wedges and serve with dips.
Notes
