Description

A creamy, high-protein, budget-friendly pasta made with blended cottage cheese, garlic, and parmesan—perfect for a cozy, weeknight dinner.


Ingredients

  • Rotini pasta
  • 1 cup cottage cheese (preferably full fat)
  • 1/2 cup grated parmesan cheese
  • 2 garlic cloves, minced
  • 1 tablespoon olive oil
  • 1 tablespoon lemon juice
  • Salt, to taste
  • Black pepper, to taste
  • Optional: chopped parsley, extra parmesan, or cracked black pepper for serving

Instructions

  1. Bring a large pot of salted water to a boil. Cook the rotini until al dente. Reserve 1/2 cup pasta water, then drain.
  2. In a skillet, heat olive oil over medium heat. Add minced garlic and sauté for 1–2 minutes until fragrant. Do not brown.
  3. In a blender, combine cottage cheese, sautéed garlic with oil, parmesan, lemon juice, salt, and pepper. Blend until completely smooth.
  4. Return cooked pasta to the pot. Pour the sauce over and toss gently. Add reserved pasta water a little at a time until the sauce coats the pasta well.
  5. Serve warm, topped with parsley, extra parmesan, and black pepper if desired.

Notes

Use full fat cottage cheese for best results. Let the blender run longer than expected for extra smoothness. This pasta is best served fresh. Add veggies like spinach or roasted broccoli, or protein like grilled chicken or chickpeas to make it a complete meal. Reheat with a splash of milk or water if needed.
