Description

Ingredients

  • Olive oil
  • Onion
  • Serrano peppers
  • Garlic
  • Fresh cilantro
  • Shrimp
  • Fresh lime juice
  • Long grain white rice
  • Low sodium chicken broth
  • Salt

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Sauté onion, garlic, and Serrano peppers until softened and fragrant.
  3. Add shrimp and cook about 2 minutes per side until pink and opaque.
  4. Remove shrimp from the pot and set aside.
  5. Add rice to the pot and stir to coat with oil and aromatics.
  6. Pour in chicken broth and fresh lime juice.
  7. Bring to a gentle simmer, cover, and cook on low heat until rice is tender and liquid is absorbed.
  8. Return shrimp to the pot and stir to combine.
