- 1 cup all-purpose flour
- 3 tbsp granulated sugar
- 4 oz unsalted butter, softened
- 1 tsp pure vanilla extract
- 1 cup finely chopped toasted pecans
- 1 cup powdered sugar (for rolling)
Instructions
- Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper or leave ungreased.
- In a large bowl, mix flour, pecans, granulated sugar, softened butter, and vanilla extract by hand until the dough comes together.
- Wrap dough in plastic wrap and refrigerate for 30 minutes to firm up.
- Roll chilled dough into 1-inch balls and place on baking sheet with space between each.
- Bake for 15 minutes until set but not browned. Let cookies cool on the sheet for 1–2 minutes.
- While warm, gently roll each cookie in powdered sugar. Let cool for 20–25 minutes.
- Roll again in powdered sugar once fully cooled for a snowy finish.
Notes
Toasting the pecans enhances their flavor. Don’t overbake—cookies should remain pale. For nut-free cookies, omit the pecans entirely. These cookies freeze well before or after baking.
