- ⅔ cup unsalted butter, softened
- ⅔ cup sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1¾ cups all-purpose flour
- ½ teaspoon kosher salt
- ¼ teaspoon baking soda
- Green gel food coloring
- Green sanding sugar (optional, for edges)
Instructions
- In a large bowl, cream the butter and sugar until light and fluffy (about 3–4 minutes).
- Beat in the egg and vanilla until smooth.
- In a separate bowl, whisk together flour, salt, and baking soda. Gradually mix the dry ingredients into the wet until a soft dough forms.
- Divide the dough in half. Leave one half plain and tint the other half with green gel food coloring.
- Wrap both doughs in plastic wrap and chill for 1 hour.
- Roll each dough between parchment into equal rectangles. Stack green on top of plain. Peel off parchment and roll into a log.
- Wrap the log in plastic wrap and freeze for 1 hour.
- Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
- Slice log into ⅓-inch rounds. Roll edges in green sanding sugar if using.
- Place on prepared baking sheet and bake 8–10 minutes, until just set.
- Cool on a wire rack before serving or storing.
Notes
To prevent spreading, make sure your dough is very cold before slicing. You can make and freeze the dough log up to 1 month in advance. Try dipping baked cookies in melted white chocolate or switching the green for red to suit different holidays.
