  • 3 ¼ cups all-purpose flour
  • 2 cups granulated sugar
  • 1 cup dark brown sugar
  • 1 ¼ cups Dutch-process cocoa powder
  • 2 ½ teaspoons baking powder
  • 2 teaspoons baking soda
  • 2 teaspoons espresso powder
  • 1 ½ teaspoons kosher salt
  • 1 ½ cups full-fat sour cream
  • ¾ cup vegetable oil
  • 4 large eggs
  • ½ cup buttermilk
  • 1 ½ tablespoons apple cider vinegar
  • 1 teaspoon vanilla extract
  • 1 ½ cups strong hot coffee or boiling water
  • 2 tablespoons softened butter (for greasing the pan)
  • For the Frosting:
  • ⅓ cup unsalted butter
  • ⅓ cup sour cream
  • 1 ¼ cups granulated sugar
  • 1 tablespoon Dutch-process cocoa powder
  • 1 teaspoon vanilla extract
  • 1 cup dark chocolate chips
  • A pinch of salt

Instructions

  1. Preheat oven to 350°F. Grease a half-sheet pan (about 18.5 by 13.5 inches) with softened butter. If your pan has 1-inch sides, be careful not to overfill.
  2. In a large bowl, whisk together flour, sugars, cocoa powder, baking powder, baking soda, espresso powder, and salt.
  3. In another bowl, combine sour cream, vegetable oil, eggs, buttermilk, vinegar, and vanilla. Whisk until smooth.
  4. Pour the wet ingredients into the dry and mix until just combined. Slowly add hot coffee and stir until the batter is smooth and shiny.
  5. Pour batter into the prepared sheet pan. Bake for 18–20 minutes, or until a toothpick inserted in the center comes out clean. Do not overbake.
  6. For the frosting: Melt butter, sour cream, and sugar in a saucepan over medium-high heat. Let it boil for 30 seconds, then remove from heat.
  7. Whisk in cocoa powder, vanilla, chocolate chips, and salt until glossy and smooth.
  8. Pour the warm frosting over the warm (not hot) cake. Spread evenly and let cool completely before slicing.

Notes

Store covered at room temperature for up to 3 days or in the fridge for up to 5 days. Unfrosted slices freeze well — wrap individually and thaw before frosting. Double the frosting if you love an extra thick layer!
