- For the Cake:
- 3 ¼ cups all-purpose flour
- 2 cups granulated sugar
- 1 cup dark brown sugar
- 1 ¼ cups Dutch-process cocoa powder
- 2 ½ teaspoons baking powder
- 2 teaspoons baking soda
- 2 teaspoons espresso powder
- 1 ½ teaspoons kosher salt
- 1 ½ cups full-fat sour cream
- ¾ cup vegetable oil
- 4 large eggs
- ½ cup buttermilk
- 1 ½ tablespoons apple cider vinegar
- 1 teaspoon vanilla extract
- 1 ½ cups strong hot coffee or boiling water
- 2 tablespoons softened butter (for greasing the pan)
- For the Frosting:
- ⅓ cup unsalted butter
- ⅓ cup sour cream
- 1 ¼ cups granulated sugar
- 1 tablespoon Dutch-process cocoa powder
- 1 teaspoon vanilla extract
- 1 cup dark chocolate chips
- A pinch of salt
Instructions
- Preheat oven to 350°F. Grease a half-sheet pan (about 18.5 by 13.5 inches) with softened butter. If your pan has 1-inch sides, be careful not to overfill.
- In a large bowl, whisk together flour, sugars, cocoa powder, baking powder, baking soda, espresso powder, and salt.
- In another bowl, combine sour cream, vegetable oil, eggs, buttermilk, vinegar, and vanilla. Whisk until smooth.
- Pour the wet ingredients into the dry and mix until just combined. Slowly add hot coffee and stir until the batter is smooth and shiny.
- Pour batter into the prepared sheet pan. Bake for 18–20 minutes, or until a toothpick inserted in the center comes out clean. Do not overbake.
- For the frosting: Melt butter, sour cream, and sugar in a saucepan over medium-high heat. Let it boil for 30 seconds, then remove from heat.
- Whisk in cocoa powder, vanilla, chocolate chips, and salt until glossy and smooth.
- Pour the warm frosting over the warm (not hot) cake. Spread evenly and let cool completely before slicing.
Notes
Store covered at room temperature for up to 3 days or in the fridge for up to 5 days. Unfrosted slices freeze well — wrap individually and thaw before frosting. Double the frosting if you love an extra thick layer!
