- 2 tablespoons olive oil
- 1 yellow onion, diced
- 3 carrots, sliced
- 3 celery stalks, diced
- 3 garlic cloves, minced
- 8 cups chicken broth or stock
- 1½ pounds boneless, skinless chicken breasts or thighs
- 1½ teaspoons kosher salt
- ½ teaspoon black pepper
- 1 teaspoon dried oregano
- 1 teaspoon fresh thyme (or ½ teaspoon dried)
- 2 bay leaves
- 2 cups egg noodles (or pasta of choice)
Instructions
- Heat olive oil in a large Dutch oven or pot over medium heat.
- Sauté onion, carrots, and celery until softened, about 5 minutes.
- Add minced garlic and cook for 1 minute more until fragrant.
- Stir in chicken broth, chicken, oregano, thyme, salt, pepper, and bay leaves.
- Bring to a simmer and cook until chicken is tender, about 15 minutes.
- Remove chicken, shred with two forks, and return to pot.
- Bring soup to a gentle boil, add egg noodles, and cook until noodles are just tender, about 6–7 minutes.
- Taste and adjust seasoning. Remove bay leaves before serving.
Notes
For best texture, cook noodles separately if planning to store leftovers. Add fresh herbs like parsley or dill for a bright finish. Use rotisserie chicken for a quick shortcut.
