- 1 cup panko breadcrumbs
- 1/2 cup grated Parmesan cheese
- 2 tablespoons olive oil
- 1 teaspoon minced garlic
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon dried Italian seasoning
- Cooking spray
- 1 tablespoon fresh parsley, chopped
Instructions
- Preheat oven to 400°F (200°C). Line a baking sheet with foil and coat lightly with cooking spray.
- In a large bowl, combine all ingredients. Mix gently until just combined.
- Roll into 1-inch meatballs and arrange in a single layer with space between each.
- Bake for 20 minutes, until lightly golden and cooked through.
- Optional: Make garlic butter sauce by melting 4 tablespoons butter in a skillet, adding 1 teaspoon garlic, cooking until fragrant, and stirring in parsley, salt, and pepper. Spoon over meatballs.
Notes
