- 2 boneless, skinless chicken breasts
- Salt and black pepper, to taste
- 1 teaspoon dried oregano
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 4 cups fresh ripe tomatoes, chopped (or halved if cherry tomatoes)
- Fresh basil or parsley, chopped for garnish
Instructions
- Slice chicken breasts into even tenders. Season with salt, black pepper, and oregano.
- Heat 1 tablespoon olive oil in a large nonstick skillet over medium heat. Sear chicken in batches until golden and cooked through. Transfer to a plate.
- Lower heat and add remaining oil, garlic, and a pinch of oregano. Stir for 1 minute until fragrant.
- Add tomatoes, season with salt and pepper, and cook for 5 minutes until tomatoes soften and release their juices.
- Turn off heat, return chicken to the skillet, and nestle into the tomato mixture. Let rest 1–2 minutes.
- Sprinkle with fresh basil or parsley and serve hot.
Notes
Use ripe tomatoes for the best flavor. Don’t overcrowd the skillet when searing chicken. For creamy variation, add a splash of cream or Greek yogurt at the end.
