Description

This Chicken and Avocado Panini is the perfect blend of juicy chicken, creamy avocado, and crispy ciabatta bread. Simple to make and customizable to fit your family’s preferences, it’s a quick and healthy meal that’s great for busy nights or weekend lunches.


Ingredients

  • 3 boneless, skinless chicken breasts (about 1.5 lbs)
  • 1 ripe avocado
  • 2 ciabatta rolls
  • 1 cup fresh spinach
  • 2 tbsp mayonnaise or aioli
  • Salt and pepper to taste
  • 1 tbsp olive oil
  • 1 tsp lemon juice

Instructions

  1. Season chicken breasts with salt and pepper. Heat olive oil in a skillet over medium heat. Cook chicken for 6-7 minutes per side until golden brown and cooked through. Check internal temperature (165°F) for perfect juiciness.
  2. Add spinach to the same skillet and sauté for 2-3 minutes until wilted. Remove from heat.
  3. Slice ciabatta rolls in half and toast until golden brown (about 3-4 minutes) in a toaster or on a grill. Optionally, rub garlic on the inside of the toasted bread.
  4. In a bowl, mash avocado with lemon juice and a pinch of salt. Spread on the toasted ciabatta rolls.
  5. Spread mayonnaise or aioli on one slice of each ciabatta roll. Layer cooked chicken, sautéed spinach, and mashed avocado on one slice, then top with the other slice. Press down gently.
  6. Grill the sandwich in a skillet over medium heat for 3-4 minutes on each side, until golden brown and crispy. Serve warm.

Notes

You can substitute chicken thighs or rotisserie chicken for a quicker version. Add hot sauce or jalapeños for some spice, or use mozzarella or cheddar cheese if you prefer a cheesy panini.
