- 450g boneless skinless chicken breasts
- 1 tsp Italian seasoning
- 1/2 tsp garlic powder
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 tbsp olive oil
- 280g fettuccine or linguine
- Salt for the boiling water
- 113g unsalted butter
- 480ml heavy cream
- 2 cloves garlic, minced
- 125g freshly grated Parmesan cheese
- 1 tsp Italian seasoning
- Salt and pepper to taste
- Fresh parsley for garnish, optional
Instructions
- Slice the chicken breasts lengthwise to create thinner cutlets.
- Season both sides with Italian seasoning, garlic powder, salt, and black pepper.
- Heat olive oil in a large skillet over medium-high heat until shimmering.
- Add the chicken and cook for 4 to 5 minutes per side until golden brown and cooked through.
- Transfer the chicken to a plate and let it rest.
- Bring a large pot of well-salted water to a boil.
- Cook the fettuccine or linguine until al dente, about 8 to 10 minutes.
- Reserve 1/2 cup of pasta water, then drain the pasta.
- In the same skillet used for the chicken, melt the butter over medium heat.
- Add the minced garlic and cook for about 1 minute until fragrant.
- Pour in the heavy cream, add the seasonings, and bring to a gentle simmer.
- Cook for 3 to 4 minutes, stirring occasionally, until slightly thickened.
- Remove the skillet from the heat and stir in the freshly grated Parmesan until smooth and glossy.
- Toss the drained pasta directly into the Alfredo sauce until every strand is coated.
- Slice the rested chicken into strips or bite-sized pieces.
- Arrange the chicken over the pasta and garnish with parsley and extra Parmesan if desired.
- Serve immediately while the sauce is silky and creamy.
Notes
Use freshly grated Parmesan for the smoothest sauce. Add the cheese off the heat to prevent graininess, and save pasta water to loosen the sauce if needed.
