- 1 cup sour cream
- ½ cup milk
- ¼ cup melted butter
- 1 teaspoon onion powder
- 1 teaspoon garlic powder
- Salt and pepper to taste
- For the Topping:
- 1 cup extra shredded cheddar cheese
- ½ cup breadcrumbs (optional)
- 1 teaspoon paprika
Instructions
- Preheat oven to 350°F (175°C).
- Steam broccoli until just tender, about 5 minutes.
- In a large bowl, whisk together cream of mushroom soup, sour cream, milk, melted butter, onion powder, garlic powder, salt, and pepper.
- Stir in shredded cheddar and steamed broccoli until coated.
- Add cooked rice and mix until well combined.
- Transfer mixture to a greased 9×13-inch baking dish.
- Top with extra cheese, breadcrumbs, and paprika.
- Bake for 25–30 minutes, until golden and bubbly.
- Let rest for 5 minutes before serving.
Notes
Use day-old rice for best texture and avoid overcooking the broccoli. Sharp cheddar adds the most flavor. For added crunch, top with crushed crackers or extra breadcrumbs. This casserole is easy to make ahead and freezes well for future meals.
