- 1 large cauliflower, about 1 kg, cut into florets
- 60 g unsalted butter
- 60 g all-purpose flour
- 750 ml whole milk
- 200 g cheddar, grated
- 50 g parmesan, grated
- 1 teaspoon Dijon mustard
- Salt and pepper to taste
- Nutmeg, optional
Instructions
- Preheat the oven to 200°C (390°F).
- Boil or steam the cauliflower florets for 5–7 minutes until just tender. Drain well and set aside.
- In a saucepan, melt the butter over medium heat. Stir in the flour and cook for 1–2 minutes to form a roux.
- Gradually whisk in the milk, stirring constantly until smooth and thickened.
- Reduce heat and stir in the cheddar, parmesan, and Dijon mustard until melted and combined. Add a pinch of nutmeg if using. Season with salt and pepper to taste.
- Arrange the cauliflower in a baking dish and pour the cheese sauce over it evenly.
- Optionally top with extra cheese.
- Bake for 25–30 minutes until golden and bubbling.
Notes
You can prep this dish ahead of time and refrigerate for up to 24 hours before baking. For added flavor, try mixing cheeses or adding a crunchy topping like breadcrumbs.
