Description

These Carrot Cake Pancakes combine the cozy flavors of carrot cake with the ease of homemade pancakes. Warmly spiced, sweet, and tender — they’re the perfect way to start a special morning.


Ingredients

  • Vegetables:
  • 2 medium carrots, grated, washed and peeled
  • Dry Ingredients:
  • 2 cups all purpose flour
  • 1 tablespoon baking powder
  • ½ teaspoon salt
  • 1 teaspoon pumpkin pie spice
  • 2 tablespoons light brown sugar, packed
  • Wet Ingredients:
  • 1½ cups milk (2% or whole)
  • 3 tablespoons melted butter
  • 1 large egg, beaten
  • Nuts:
  • ½ cup toasted and chopped walnuts
  • Optional Add Ins:
  • A pinch of grated nutmeg or cinnamon
  • 1 teaspoon vanilla extract
  • Orange zest

Instructions

  1. Wash, peel, and finely grate the carrots. You’ll need about 1 cup grated.
  2. In a large bowl, whisk together flour, baking powder, salt, pumpkin pie spice, and brown sugar.
  3. In another bowl, whisk milk, melted butter, and beaten egg until smooth.
  4. Pour wet ingredients into the dry. Stir gently until just combined. Fold in carrots and walnuts.
  5. Preheat a nonstick skillet or griddle over medium heat. Lightly grease. Pour ½ cup batter per pancake. Cook 3–4 minutes until bubbles form. Flip and cook 2–3 minutes more.
  6. Keep pancakes warm in a low oven while cooking the rest. Serve with maple syrup, cream cheese drizzle, or extra walnuts.

Notes

Let the batter rest 5–10 minutes before cooking for fluffier texture. Adjust thickness with a splash of milk if needed. These pancakes reheat and freeze well, making them perfect for meal prep too.
