Description
Caprese stuffed chicken is juicy, cheesy, herby, and finished with a garlicky balsamic glaze—all in one pan. Fancy enough for guests, easy enough for a weeknight.

- 2 boneless, skinless chicken breasts
- 3.5 oz sun-dried tomatoes in oil
- 4 fresh mozzarella slices
- 6 fresh basil leaves
- 1/2 teaspoon dried oregano
- 1/2 teaspoon dried basil
- 1 tablespoon minced garlic
- 1/3 cup balsamic vinegar
- Salt and pepper, to taste
- Toothpicks (to secure chicken)
- Optional: balsamic glaze and extra basil for garnish
Instructions
- Preheat oven to 350°F (175°C).
- Using a sharp knife, slice a pocket into the side of each chicken breast without cutting all the way through.
- Stuff each chicken breast with 2 mozzarella slices, 3 basil leaves, and half the sun-dried tomatoes. Secure with toothpicks.
- Season the outside with dried oregano, dried basil, salt, and pepper.
- Heat an oven-safe skillet over medium heat with a drizzle of oil. Sear chicken 3–5 minutes per side until browned.
- Mix balsamic vinegar with garlic and pour over the chicken in the skillet.
- Transfer skillet to oven and bake 10–15 minutes, until chicken reaches 165°F (75°C).
- Let chicken rest for a few minutes, then remove toothpicks, slice, and drizzle with balsamic glaze and garnish with fresh basil if using.
Notes
Use fresh mozzarella and oil-packed sun-dried tomatoes for best flavor. No cast iron? Sear in any pan, then transfer to a baking dish to finish in the oven.
