Description
Crispy golden edges, fluffy centers, and zero fuss these butter swim biscuits bake in a puddle of melted butter for the ultimate lazy-day treat.
Ingredients
Scale
- 2½ cups all-purpose flour
- 4 teaspoons baking powder
- 1 tablespoon sugar
- 2 teaspoons kosher salt
- 2 cups cold buttermilk
- ½ cup (1 stick) unsalted butter, melted
Instructions
- Preheat oven to 450°F (232°C).
- In a medium bowl, whisk together flour, baking powder, sugar, and salt.
- Pour in the cold buttermilk and stir gently just until combined. The dough will look lumpy – that’s perfect.
- Pour melted butter into an 8×8 baking dish and tilt to coat the bottom evenly.
- Spoon the dough into the pan and spread it out to the edges. Don’t worry if the butter pools around the sides.
- Lightly score the dough into 9 squares with a butter knife.
- Bake for 28 minutes, or until the top is golden and edges are crisp.
- Let cool for 5 minutes before serving to allow the butter to soak in.
- Use a spatula to lift out squares and enjoy warm.
Notes
Keep the buttermilk cold for fluffier biscuits. Don’t skip the scoring – it helps everything bake evenly and makes serving easier.
