Ingredients
Scale
- 5 ounces refined white sugar
- 5 ounces unsalted butter
- 1 tablespoon malted milk powder
- 1 1/2 teaspoons vanilla extract
- 1 teaspoon kosher salt
- 1/4 teaspoon baking soda
- 1/4 teaspoon baking powder
- 5 ounces all-purpose flour
Instructions
- Toast the sugar in a dry pan over low heat until lightly golden and fragrant.
- Brown the butter in a small saucepan until golden with a nutty aroma. Cool completely.
- Cream the cooled brown butter with toasted sugar, vanilla, malted milk powder, salt, baking soda, and baking powder.
- Add flour and mix until the dough comes together.
- Roll into a log, wrap in parchment, and chill for at least 1 hour.
- Preheat oven to 350°F (177°C).
- Slice the dough into even rounds and place on a parchment-lined baking sheet.
- Bake until golden at the edges, about 10–12 minutes.
- Cool on the pan briefly, then transfer to a wire rack to cool completely.
Notes
Cool the brown butter fully before mixing to prevent spreading. Chilling the dough ensures clean slices and the best texture. These cookies keep well and are perfect for make-ahead holiday baking.
