Description

This blueberry loaf tastes like it came straight from a cozy café—soft, juicy, and packed with bursting blueberries in every bite. It’s quick to make, keeps well for days, and is perfect for breakfast, brunch, or a midday treat.


Ingredients

  • 1 and ½ cups all-purpose flour
  • ½ cup granulated sugar
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • ¾ cup milk, room temperature
  • ¼ cup vegetable oil or melted butter
  • 1 large egg, room temperature
  • ½ teaspoon vanilla extract
  • 1 and ½ cups blueberries, fresh or frozen (do not thaw)
  • 1 tablespoon granulated sugar (for topping)

Instructions

  1. Preheat oven to 350°F (175°C). Lightly grease or line a 9×5-inch loaf pan.
  2. In a large bowl, whisk together flour, sugar, baking powder, and salt.
  3. Add milk, oil, egg, and vanilla extract to the bowl. Stir gently until just combined—do not overmix.
  4. Toss blueberries in 1 teaspoon of flour to prevent sinking.
  5. Spread a thin layer of plain batter into the bottom of the pan.
  6. Fold floured blueberries into the remaining batter and pour into the pan.
  7. Sprinkle 1 tablespoon of sugar evenly over the top.
  8. Bake for 55 to 65 minutes or until a toothpick comes out clean.
  9. Let cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Notes

Use room temperature ingredients for best texture. If using frozen blueberries, do not thaw. For a citrus twist, add 1 teaspoon lemon zest to the batter. You can turn this into muffins by baking in a lined muffin tin for 20–25 minutes. To freeze, wrap slices individually for easy snacking.
