Description

Soft, golden sourdough sweet rolls filled with juicy blueberries and bright lemon zest—perfect for a slow brunch or weekend bake.


Ingredients

  • 1 cup (240g) active sourdough starter (100% hydration)
  • ½ cup (120ml) whole milk, warmed
  • ¼ cup (50g) granulated sugar
  • 1 large egg
  • ¼ cup (56g) unsalted butter, softened
  • 2½ cups (300g) all-purpose flour (plus extra for dusting)
  • ½ teaspoon salt
  • Zest of 1 lemon
  • 1 cup fresh or frozen blueberries (thawed and drained)
  • ¼ cup (50g) granulated sugar (for filling)
  • 1 tablespoon lemon zest (for filling)
  • 1 tablespoon lemon juice (for filling)
  • 2 tablespoons unsalted butter, softened (for filling)
  • Optional: 1 teaspoon vanilla extract or ground cinnamon
  • 1 cup (120g) powdered sugar (for glaze)
  • 1–2 tablespoons fresh lemon juice (for glaze)
  • 1 teaspoon vanilla extract (optional, for glaze)

Instructions

  1. In a large bowl, mix sourdough starter, warm milk, and sugar.
  2. Add egg, softened butter, and lemon zest. Stir to combine.
  3. Gradually add flour and salt to form a sticky dough.
  4. Knead on a floured surface for 6–8 minutes until smooth and elastic.
  5. Place in a greased bowl, cover, and let rise at room temp 4–6 hours or refrigerate overnight.
  6. Mix butter, sugar, lemon zest, and juice for the filling. Add vanilla or cinnamon if using.
  7. Toss blueberries in 1 tbsp flour.
  8. Roll dough into 12×10-inch rectangle, spread filling, and sprinkle blueberries.
  9. Roll tightly and slice into 8–10 pieces. Place in greased baking dish.
  10. Cover and rise 1.5–2 hours until puffy.
  11. Preheat oven to 350°F (175°C) and bake for 25–30 minutes.
  12. Whisk glaze ingredients and drizzle over slightly cooled rolls.

Notes

Use fresh or frozen blueberries. Refrigerate dough overnight for easier morning baking. Rolls freeze well before glazing.
